I found my favourite bran muffin recipe and couldn’t be happier! It’s a recipe inspired by the Joy of Baking with some delicious mods:
- 1 1/2 cups wheat bran
- 1/2 cup coconut oil
- 1/2 cup honey
- 1/2 cup brown rice syrup
- 2 eggs
- 2 Tbsps molasses
- 1 tsp vanilla extract
- 1 1/4 cups flour
- 1 1/4 cups whole wheat flour
- 1 3/4 cup old fashioned rolled oats
- 1 tsp cinnamon
- 1 Tbsp orange zest
- 1/4 tsp salt
- 2 tsps baking soda
- 1 tsp baking powder
- 1 1/2 cups milk (can do half buttermilk, or mix nut milks, I use almond milk)
Cream the coconut oil, brown rice syrup and honey. Beat in one egg at a time. Add vanilla and molasses until well mixed. Add wheat bran.
In a large bowl whisk together the flours, oats, cinnamon, orange zest, salt, baking powder and baking soda. In another bowl combine the milks.
Add the flour mixture alternately with the milk to the bran mixture (begin and end with the flour mix). Cover and keep in the fridge for a few hours or overnight (I’ve baked a half dozen right away, and they turn out yummy too).
Bake at 375 for 20 minutes. Enjoy!
